Classic Carrot Cake

Ingredients

  • 150 g Butter
  • 175 g Brown Sugar
  • 4 g Salt
  • 250 g Cake Flour
  • 150 g Eggs
  • 8 g Baking Powder
  • 1 g Baking Soda
  • 1 tsp. Cinnamon
  • 1 tbsp. Orange zest
  • 100 g Grated Carrots
  • 170 g Milk
  • 50 g Chopped Walnuts

Instructions

  • Have all ingredients at room temperature.
    Place butter in the mixing bowl and with the paddle attachment beat it slowly until smooth and creamy.
    In moderate speed add the sugar and salt.  Cream the mixture until light and fluffy. This will take about 10min.
    Add eggs one at the time. After each addition wait until the egg is absorbed before you add another one. 
    Mix all dry ingredients and sift them. 
    In slow speed add sifted dry ingredients, grated carrots, orange zest, chopped walnuts, and milk. 
    Mix until everything is well blended. Do not overmix.
    Grease baking pan and lay baking paper on the bottom. Transfer batter into the pan and smooth out the top. Bake in a preheated oven at 160°C for approx. 70min. Let rest for approx. 5– 7 min. Then, remove and allow to cool completely on a cake rack.
