Lentil Soup with Caramelised Onion and Bacon

- 400 g Red Lentil
- 2 Diced Carrots
- 2 sticks Diced Celery
- 100 g Diced Celeriac
- 1 clove Finely Chopped Garlic
- 60 ml Olive Oil
- 1.5 l Chicken Stock
- Cumin, Paprika, Salt and Black Pepper
- 3 Medium Onions thinly sliced
- 100 g Diced Bacon
- 30 g Butter
Heat butter in a large saucepan over medium heat. Add onion and bacon and cook until onion is caramelised. Keep aside.In a deep saucepan over medium heat add olive oil , carrots,celery, celeriac and cook for 5 min. Add garlic, lentil, cumin, paprika and chicken stock. Let it cook for 15min or until lentil is cooked. Blend the soup with stick blender. Adjust the consistency if needed with little corn flour dissolved in cold water and cook for 1-2min. Remove from the head.Serve with caramelised onion and bacon on top and parsley. Bon Appetite
